Your product will be made fresh for you by our Italian producers.

  • Orders placed Monday by 2 p.m. (EST/EDT) will be delivered between Wednesday, Thursday, Friday of the following week. (Excluding Statutory Holidays)
  • Orders placed from Monday after 2 p.m. (EST/EDT) to Sunday will be delivered two weeks later.

Due to the perishable nature of this item, orders do NOT ship over the weekend. It is famous above all for the exquisite dish that takes its name: by heating of the cheese (usually half the wheel), the internal pasta begins to melt and can thus be "scraped" off and placed on the serving plate. The texture is soft, and smooth, and the flavor is delicate and sweet. Traditionally it is served with potatoes cooked in foil, and pickles such as gherkins and onions.
