Made throughout the Tuscan region, this pasteurized sheep’s milk cheese has been aged for at least 60 days. Produced using only the Tuscan selected milk - hence its DOP denomination – It is characterized by a yellow to brown rind, whose tone varies depending on the treatment and production. All tones are normal. A great grating cheese, it can be used to flavor first dishes and it’s also delicious eaten alone or with honey and fruit.
