Chocolate Waffles

Chocolate Waffles


  • 375 mL (1½ cups) all-purpose flour
  • 45 mL (3 Tbsp) granulated sugar
  • 15 mL (1 Tbsp) baking powder
  • 2 mL (½ tsp) salt
  • 60 mL (¼ cup) unsweetened cocoa powder
  • 2 large eggs
  • 375 mL (1½ cups) whole milk
  • 60 mL (4 Tbsp) butter, melted
  • 5 mL (1 tsp) vanilla extract
  • 250 mL (1 cup) chocolate chips
  • Whipped cream, syrup and fresh berries, for topping
 

Preheat the waffle maker. Combine flour, sugar, baking powder, salt and cocoa in a large bowl. Make a well in the middle of the ingredients and set aside.

Separate the egg yolks from the whites. In a medium bowl, beat the egg whites with a mixer until fluffy. In another bowl, mix the egg yolks, milk, butter and vanilla extract. Fold in the egg whites, leaving it lumpy. Add the egg mixture into the well of the dry ingredients and mix with a rubber spatula until combined, leaving it lumpy. Add the chocolate chips. When the waffle maker is hot, spray with cooking spray. Ladle batter, about 150 mL (â…” t.) per waffle, into the waffle maker. Cook the waffles until crisp.

Serve hot with whipped cream, syrup and fresh berries. Makes 6 servings.
